The Sauvignon Blanc is 100% tank fermented, the result of which is a pure and bright expression of Sauvignon Blanc, with enough minerality and texture to make this a very good match to seafood. Quintessentially Margaret River, this has powerful fruit and searing acidity and drive. The fruit is farmed biodynamically, free of chemicals, from the family owned vineyard in Yallingup.
Bright sugar snap pea, summer jasmine, green apple and crushed chalk. The palate is intense and pure, packed with sauvignon blanc fruit characters, backed by a seam of minerality and vibrant acidity. The texture is energetic and slippery, with sprinklings of white spice around the edges of the fruit.
