Winemaking: 100% Chenin Blanc. Five years on lees.
Sparkling Chenin Blanc from our dry-grown organic, biodynamic vineyard. Picked on the earlier side of fully ripe with the intention of harnessing as much natural acidity as possible, the wine then spends 60 months on lees to build textural complexity and depth of flavour.
A rich golden in the glass, this has a creamy and toasty nose with aromas of stewed apple, paraffin, lemon curd, sea salt and hints of white spice. The palate is as the nose suggests, characterful and yet tight; the acidity keeping the flavours in check. The Chenin fruit has an attractive firmness and structure to it, reminiscent of crushed slate.
