Multi award-winning - Sauvignon Blanc 2023

Our estate grown biodynamic sauvignon blanc was hand-picked, and gently pressed. The wine was then chilled and pressed into stainless steel tank before racking to vessel for fermentation. Half of the wine went through malolactic fermentation in oak barrels. The ten month maturation was in both large and small format oak, being a mix of new and seasoned barrels, prior to being bottled. 

This barrel-fermented sauvignon blanc boasts exceptional purity.  The experience is defined by a combination of stone fruits and green apple, with hints of cut grass and flint leaving a tingly trail in its wake. It’s both slippery and restrained, presenting a very pretty expression of sauvignon blanc.

"The rubber that hits the road here is not so much about overt fruit flavour, though there’s enough to satisfy on that front, and more about elegance, and associated texture. There’s a fair amount of sophistication in play here. It tastes of lemongrass, gravel, tropical fruit and grapefruit, a slither of woodsmoke arguably in play too. But the flavour profile isn’t really the thing. It’s the taut, textural control. The presence. And the way this wine knows when to speak, and when to be quiet. It’s very good." (Dec 24)

"The 2023 Sauvignon Blanc is biodynamically grown and Demeter certified and was hand-picked, whole-bunch pressed, fermented wild in a combination of amphora and large-format oak and matured for 10 months, with partial malolactic fermentation. On the nose, the wine leads with vanilla wafer and shaved fennel, green apple, cloth/cheese rind and a hint of licorice. The wine is textural and wide, with layered flavor and shapely phenolics stitched with saline threads of acidity. To make an international connection here, the wine is a convincing Graves-style Bordeaux blanc, yet it retains its sense of place in Margaret River via the fresh fruit and fine acidity. A superb effort, it's elegant in the extreme."
