Texturally creamy and very tight, with delicate Chenin Blanc flavours that duck and dive between the bubbles of fine bead.
This has granny smith apple, fresh lime with good line and acidity. Very fresh for the 4 years it has under its belt, in another five, the fruit will have receded in order to make way for the gentle spice and talcy texture that will no doubt emerge. Soft and very pretty now, with no shortage of race and pace in the mouth.
The fruit is hand-picked early to ensure requisite acidity for sparkling, primary fermentation is carried out in tank. It is then left to rest on its lees for 60 months, after which time is it disgorged and bottled for release. This wine is kept back intentionally to show the effects of extended time on lees and showcases the incredible ageing potential of Chenin blanc.
